The steel BB will be best for goose and the #2 for duck with the MOD choke. Your range will be limited to about 40 yards and less. Beyond that there are not enough BB pellets to have a good pattern and #2's lack the energy. You can get lucky, but will most likely be running after injured birds.
The TSS matrix #5's are a different story. ***Make sure your choke is rated for TSS or at least TSS/matrix blend before shooting it. TSS does not deform the way lead does and can ruin not just your choke, but your beautiful new A5 as well. Now then, the good thing about TSS is that it tends to pattern better than bismuth or steel. Provided the shot has a density at or above 12 g/cc (same as lead) you should not have a problem on your hunt. A better density like 15 g/cc or higher would be even better. #5's with a MOD choke will have you taking goose out to 40 and ducks to 50 with no problems. The SKT choke could be very useful for fast moving ducks at less than 40 yards with this load. I'd probably stay with the MOD and switch to the SKT for the close ones.

@BRICKBURN said earlier...it all depends on the setup, what you expect and being able to adapt if necessary. I would make sure you have all your chokes in your blind bag in case you want to change it up.
For reference - This past Fall I was using a FULL choke with Federal Black Cloud TSS BB&7 and Turkey loads for goose out to 70 yards and was effective, but it was situational. We tailored the load and choke for the conditions we expected.

Currently my friend (IGS) is using a SKT choke and Federal Black Cloud TSS 3&9 for ducks out to 40 yards with no problem. Mostly quick moving passing shots so he wants a more open pattern.
If they are more skittish and keep their distance, he changes to a MOD choke (same ammo) and is good to 50+ yards. Also good for taking ducks on the water.
Over the weekend he had mergansers land on the outskirts of the decoys at 70 yards. He took out the SKT choke and Black Cloud load and put in a TKY choke with Federal Heavyweight Turkey TSS #7's 2 1/4 oz. He waited until they closed the distance to 60 yards and three heads lined...ducks in the boat.
***The FULL and MOD chokes we use are from Carlson's and are rated for TSS. He's shooting a Browning Maxus, I'm using a Benelli SBE3 and we each have a Browning Cynergy O/U's with 3.5" chambers. The O/U is a great option for having 2 loads and 2 chokes and being able to change between them quickly.
