How do you sharpen your knife?

Yesterday I was in Safari outdoors and was looking at the myriad selection of mechanical sharpening devices, they even had a 2sided wet stone what do you use.

This is the sharpener I use at home. I have a small diamond hone in a brass handle I carry in the field.

I use the Lansky, in the three diamond stones version, as well as a two sided dry stone.
I am not fully convinced of the Lansky virtues, due to:
-not satisfactory suggested sharpening method; for a long time I followed the leaflet directions to use, resulting in a dull blade; eventually, I succeeded in sharpening using the stones like a file, i.e. back and forth instead of one way only as instructed;
- round section of the guiding rods; a flat sectionwould be more suitable
- coarse threaded screws fastening the stones to the handle; with vibrations they get loose
- coarse threaded screw fastening the knife to the vise;
- non availability of spare oil; according to the owner of the shop where I bought my sharpener that oil is superfluous, to be replaced by any other light oil, or water, or nothing at all and he was right
- silence of Lansky when I wrote them about a.m. points.

Depends on the knife. I have a set of whetstones that goes 400/1000/3000/8000 (although in the real world I never go over 1000). But I've also got one of these Chef's Choice XV15's that I think works really well.

This at home, and the EZE Lap brass handled one like above in the field. I also have become a lot more reliant on a Havalon.

The work sharp Ken Onion is great for home. To bad they do not make it in DC 12v.

I use mostly a sharpening steel and a honing steel. When they need more attention. I use a Belgian blue water stone.

I tried a number of different things, included most mentioned here. Then on a hunt in the Save our PH sharpened my knife with a speedy sharp. I’ve never used anything else since. Cheap, fast, and sharpens like nothing else I’ve ever used.

My great uncle taught me how to sharpen with oil stones when I was 9 or 10. I now use a diamond stone for the rough stone and fine and extra fine oil stones for the rest. With a leather strop for the final just right edge.

When I was 5 or so I asked my dad how to sharpen a knife, he showed me the old wet stone way. I could put a pretty good edge on any knife with one.

I graduated to a oil stone and ended up with the same results as a wet stone.

I tried a few fancy sharpeners when they hit the market but then one night I was watching a infomercial on TV where they were showing the Work Sharp. I bought one of them and have never gone back.

Before I leave for the field I'll use the Work Sharp to put a razor edge on the knifes that I am taking, once or twice a year I'll sharpen up all my knifes in the kitchen. I had a friend who while we were elk hunting complained that the knifes in his camper were duller than dull. I took them and within minutes had them sharp enough to shave with.. It wasn't two days later that the same friend cut a finger to the bone by just cleaning one of his knifes with a towel.

There are times that I'll even sharpen up the replaceable blades on a Outdoor Edge razor knife. They don't come out quite as sharp as the factory edge but they are still pretty darn sharp.

Can you post a picture of the blade engaging the actual sharpeners? A fixed V configuration?

It would be nice if they made one for 12 vdc but until then I would just do as suggested above and get a 12vdc to 110 volt ac converter to use off of a vehicle.

Arkansas whetstones and a barbers stripe. All you need for a hair shaving edge.

Japanese natural stones are the best, if you can get hold of a authentic ones. Will give you razor like edge.
