More pedestrian: A good bull moose on a plain old fashioned Ontario resident tag, which these days is rarer than finding a Rhino to shoot.
 
I don’t know how old your son is but a ton can change between now and then. Game commissions generally work on a 3-5 year rotation/plan and can do things like get rid of Non-Res OTC tags (Colorado), reduce non-res tag pool (Wyoming), close a unit or slash the number of tags for non-residents (Alaska), add wolves, the list goes on. If you want to DIY elk hunt I’d encourage you to do it sooner rather than later, you can also consider is an opportunity to scout and learn the area for a later trip with your son helping improve his chances of success

- Take all my family to my real home in the Brooks Range for two weeks of hell.., er, um , I mean hunting for moose/black bear/wolf.

- Take all my family to Africa for two weeks of luxury hunting for PG.

As far as actual species: a big Wolverine and his kick-ass cousin the Honey Badger. Every single time I see a Wolverine I’ve either been in the middle of a stalk and couldn’t shoot or it was a mile away on the side of a hill and doing that smart-assed wolverine shuffle-hustle with no hope of ever closing the ground. Little bastard.

- caracal (I’d like to get the African mate to my big bobcat)
- leopard (I’d like to get the African mate to my nice mountain lion)
- an elephant (because I can’t imagine anything ever coming close to eclipsing that hunting achievement)
 
US:

I would love to do elephant but not sure it is in the cards, same for leopard and lion.

Argentina:
I have already been and checked my red stag box but I want to return for waterfowl and doves, take my wife and go to Mendoza for wine country tours then Patagonia for the sights.
