Each South African province offers something unique, in terms of topography, habitat and species. A number of species have been introduced to provinces where they do not naturally occur which means that most provinces now offer a large number of species.
I operate in the Northwest and Limpopo provinces thus I can only speak on these two.
In my opinion the Limpopo is still the mecca of hunting in South Africa. The Limpopo is bordered by Botswana and Zimbabwe in the North and the 2000000 hectare Kruger park forms the eastern border with Mozambique. The Northwest province forms the western border.
Limpopo is arguably the province with the best big 5 hunting in the country, especially in the areas round Kruger where all of the big 5 as well as hippo and crocodile can be hunted.
Northwest is the lion hunting province of South Africa, I would guess that about 90 percent of lion hunts are done here. The eastern parts of the Northwest are very similar to Limpopo in being a bushveldt area with thick cover. To the west you move into the Kalahari region. The south offers open plains similar to the free state.
